English Pea Salad

1 16 oz. package of petite peas
2 slices bacon (more if desired)
3 hard boiled eggs, diced
1 cup shredded cheddar cheese
1/2 cup chopped celery diced (optional)
1 green onion chopped

Dressing:
1/2 cup mayonnaise
1 tbs freshly squeezed lemon juice
Mix the mayonnaise and lemon juice together and mix into the rest of ingredients.  Eat immediately or chill for one to two hours.

Method:
Rinse peas in warm tap water and drain in colander.  Dice bacon into 1/2 inch dices and fry until crisp; drain bacon grease on a paper towel.  Peel hard boiled eggs under cool running water and dice into salad.  Enjoy!
