I love it when the air begins to get just a little bit crisp in the evenings. It makes me hungry for one of my favorite autumn treats using fresh peaches dropped off by the neighbors. It's easy and makes our home smell delightful.
Fresh Peach Crumble
8 ripe peaches, pitted and sliced
juice of 1 lemon (bottled juice works fine)
large pinch of ground cinnamon
large pinch of ground nutmeg
1/2 cup flour
1/2 cup firmly packed brown sugar
1 stick butter, chilled and cut into pieces
1/4 cup quick-cooking oats
Preheat oven to 375 degrees. Arrange peaches in buttered shallow baking dish, sprinkle with juice and spices. In separate bowl, combine the flour and sugar. With your fingers, blend the butter until it resembles a coarse meal. Stir in oats and sprinkle on top of peaches. Bake until peaches are soft and topping is brown (approximately 25-30 minutes).
We love to serve this with whipped cream or vanilla ice cream.
