I have a really simple, filling, and healthy pancake recipe. My husband and I started a little Sunday tradition in our home where we make breakfast for dinner. With the whole wheat, it really fills you up fast!
WHOLE WHEAT PANCAKES
1 1/4 Cups whole wheat flour
2 teaspoons baking powder
2-3 egg whites
3 Tbsp applesauce (or a large mashed banana)
1 tsp Vanilla
1 tsp cinnamon
1/2 teaspoon ground nutmeg or cloves
1 1/2 tbsp crushed pecans (or whatever nut you may like)
Mix ingredients and pour on to griddle in pancake sized puddles. Top with whatever makes you happy.
My favorite toppings include: fruit flavored yogurt, peanut butter and powdered sugar, Maple syrup, fresh fruit, applesauce

My kids prefer waffles over pancakes for dinner (which won't be happening until we get a new waffle iron - never unplug your waffle iron with the last waffle in and then forget it for a week or so - :P) Long story short - have you ever made waffles with this recipe?
ReplyDeleteThis recipe makes me hungry! A little variation: Banana waffles - totally a favorite at our house. Similar to your yummy recipe - just mash up a really ripe banana and add it to regular waffle mix. They have to cook just a little longer, but worth the wait. Tasty!
