Saving the Pumpkins

Last Sunday Sister Margaret Baker gave a wonderful five minute message about vegetables.  One of her points that has stuck with me has been about Halloween Pumpkins.  Sister Baker encouraged the sisters to carve our pumpkins the night before Halloween or the day of and then boil or bake them the next day for future use.  The idea of not throwing away my pumpkins has been percolating in my brain all week, especially now that pumpkins are only 9 cents a pound at Dan's.  However the thought of using a vegetable after it's innards have been sitting exposed to the elements just wasn't sitting well with me (I'm a wimp).  However today I came across an article on the web about using Pumpkins that has me very excited.   Click on the link to read how this article suggests scraping out all but a one inch layer of the pulp so that you have pulp to cook and a skin to carve.  There are also instructions on freezing the pulp and roasting the seeds as well as some other yummy sounding recipes.  Enjoy!
